Mid-December Summer

Finally! After having problems exporting my images to this blog (new to blogging and having a really hard time figuring out the whole thing!), I think I was able to master the process. My pictures were looking too dull and flat once posted on the web so I had to figure out how to correctly adjust the saturation and brightness to make them look "right". I think they finally look better, or at least I hope so. However, if they look as if they are on fire or totally overexposed on your monitor, then I still have a problem to solve!!!

Yesterday's post (which I had to delete because of the pics) talked about the nice weather we had here in Texas! It was very windy but warm. It actually felt like summer in the middle of winter! It was a great opportunity to grill and relax. I'm so glad I was able to enjoy the nice weather and forget about the crazy holiday rush for a while! Try these recipes whenever it feels warmish this winter.

Grilled Chicken

Grilled Chicken Breasts

12 boneless, skinless, chicken breasts
3 tbs paprika
2 tbs ground cumin
Juice of 1 large lime (or 2 small ones)
Salt and pepper to taste

Combine chicken with the rest of ingredients. Marinate for 1 hr. or overnight. Grill until done.

Guacamole

Classic Guacamole Dip

4 large avocados (Mexican)
Juice of 1 lime
1/4 cup chopped onion
Salt to taste

Mix all ingredients together.

hey can i suggest uploading your photos to somewhere like flickr instead of straight to blogger? they tend to look better that way.

I had already tried uploading the pics to Flickr but had the same problem! They were slightly better, though.
I read somewhere that this is something that sometimes happens to Mac users. ???
Anyway, I will try to upload to Flickr again once I have more photos to post.

that stinks! sometimes my photos look bad once i upload them into flickr too, i then adjust the colors just a little bit through picnik on flickr. it seems to help.

i can't wait to see some more blog posts from you!
